At our beautiful Gallego estate, nestled on the slopes of a mountain, we produce exclusive extra virgin olive oil of the highest quality. Our 1,000 olive trees, most of which are over 100 years old and some even more than 300 years old, primarily consist of Picual olives. These unique trees can produce up to 200 kg of olives per harvest.
Our olives are carefully hand-picked during the early harvest, which lasts about 5 to 7 days.
Each day of the harvest, we collect the olives in jute sacks and transport them quickly to the mill to minimize the time between picking and pressing. This process ensures the highest quality of our olive oil.
Throughout the year, the estate is maintained with love. We use natural products, prune carefully, and plow the soil to keep the trees healthy and productive.

Another characteristic of Picual olive oil is its high content of (monounsaturated) oleic acid, which can make up more than 80% of its lipid profile.
